Ally's Rice
2 cups Uncle Ben's brown rice
1/2 stick butter
2 large onions, chopped
2 cans consommé (10 1/2 oz.)
1 can water (10 1/2 oz.)
1 lb. fresh mushrooms, sliced
In a large skillet, melt the butter over medium-high heat. Add the rice and the onion and sauté until the onion is beginning to turn clear, stirring frequently. Add the consommé and the water, cover and turn the heat low. Simmer for 30 minutes before adding the mushrooms. Cover and continue simmering until the liquid is fully absorbed. Remove from heat and serve.
Our comments: This was the first dish Allyson ever cooked for "the family". We had just started dating and we invited another couple over to cook dinner. Allyson was responsible for the rice. After much anxiety and several emergency calls to Marilyn for counsel and condolence, the rice was ready just in time for desert. She is now a master rice chef and could make this recipe in her sleep.
