Annie's Waffles

1/2 cup (1 stick) butter, melted

3 eggs (separate yolks from whites)

3/4 cup milk

3/4 cup sour cream

1 tsp. vanilla

1 1/2 cups flour

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

Beat egg yolks in a large bowl.  Beat in milk, melted butter, vanilla and sour cream.  Combine the flour, salt, baking powder and baking soda into a sifter.  Sift the dry ingredients into the egg mixture and beat until just smooth.  In a separate bowl, beat the egg whites until stiff.  Fold the egg whites into the batter.  Cook in a waffle iron (it takes 90 seconds to cook in our waffle iron).

Our comments:  This is Annie's favorite.  This is the recipe that started all the cooking at our house.  With only one child, eating breakfast out was still fun.  That changed when Annie arrived.  We think these are better when cooked in a "thin" waffle iron as opposed to the thick Belgian waffle variety.
