1 batch "Hollandaise Sauce" (see Misc. Recipes at back)

Cut off the artichoke stems flush with the base of the artichoke.  Steam the artichokes until you can pull out a leaf with only slight resistance (between 30 and 40 minutes, depending on your preference).  Serve with generous portions of "Hollandaise Sauce".  A simple sauce of 5 parts mayonnaise and 1 part yellow mustard, a sprinkle of celery salt with lemon juice added to taste is pretty good in a pinch (don't even think about using low-fat mayonnaise).

Our comments:  Artichokes seem to make the meal a special occasion.  The kids love them.
