Bacon-Cheese Sliders
3 lb. fat-rich hamburger
12 potato rolls, sliced-in-2
12 slices cheddar cheese
12 slices bacon
1 onion, chopped
1 tomato, chopped
1/2 head iceberg lettuce, shredded
Dill pickle slices
French's yellow mustard
Hellman's mayonnaise
2 spatulas
1 griddle (or very large skillet)
Fire up the griddle. Season the griddle (fry the bacon). Break off about 1/4 pound hamburger and put it on the griddle (no packing, no rolling, no mixing, no patty-making). Fill up the griddle with 1/4 hamburger fragments. Mash each piece of hamburger with the back of one spatula (use the other as a scraper if the hamburger sticks to the back of the first spatula). Put the potato rolls face-down on the griddle weaving around the cooking hamburger. Flip the patties. Place a slice of cheese and a slice of bacon on each. Top each patty with the top half of a potato roll. Transfer the bottom half of the roll face-up onto awaiting plates. When fully cooked, load each with a hamburger stack. Let everyone free-style from here.
