Banana Bread

1 cup (2 sticks) butter

1 1/2 cups sugar

2 eggs

4 ripe bananas

1 tsp. vanilla

4 Tbsp buttermilk

2 cups flour

1 1/2 tsp. baking soda

1 tsp. salt

Preheat the oven to 350 degrees.  Cream butter and sugar in a large bowl.  Beat eggs and stir into the mixture.  Mash the bananas.  Stir the bananas, vanilla and buttermilk to the mixture.  Combine the flour, soda and salt into a sifter and sift into the mixture.  Stir until just smooth.  Pour into two greased 9"x 5"x 3" loaf pans or pour it all into a 9 inch ring mold.  Bake for 45 to 50 minutes.

Our comments:  We are big banana bread fans.  Nobody complains about this recipe.

Oatmeal Banana Bread.  Substitute brown sugar for regular sugar.  Double the buttermilk.  Only 1 cup of flour.  Add 1 cup of oatmeal.
