Biscuits
2 cups flour
1 tsp. salt
1 Tbsp baking powder
1/2 cup shortening
2/3 cup buttermilk
Preheat the oven to 400 degrees. Put the shortening in a large bowl. Combine the dry ingredients in a sifter and sift into the bowl. Using an electric hand mixer, blend the dry ingredients with the shortening until the mixture becomes crumbly. Add the milk and stir just enough to combine (the less you work the dough, the lighter the biscuits). Place dough on a floured surface and roll to about 1/2 inch thickness. Cut and bake until golden (about 11 or 12 minutes in our oven).
Our comments: "Serve with butter and Backbone Ranch honey. Enjoy!" The highlight of this breakfast is letting the kids cut the dough. They pick out the shapes they want from an assortment of cookie cutters that we have acquired. The last few dough scraps they mold with their hands into what I like to call their "little turd piles". This really tickles Allyson.
