Chicken in Perpetuity

1 whole chicken

Perpetuity Sauce

2 cups dark soy sauce

2 cups chicken stock

1/2 cup sherry

1/4 cup sugar

2 whole star anise

5 slices ginger root

1 green onion

1 Tbsp five spice

1 Tbsp Szechwan peppercorns

Combine the Perpetuity Sauce ingredients in a large pot and bring to a boil (adjust the seasonings to taste ... very important!).  Add the chicken.  Cover and simmer for 40 minutes (turning the chicken occasionally).  Remove the chicken to a broiling pan.  Brush the chicken with sesame oil and broil it for about 10 minutes.  Cut up the chicken and serve it with some of the sauce poured over.

 

Our comments:  Don't throw away the used sauce!  You keep this sauce and constantly improve it for the rest of your life (thus, the name).  Keep it in the freezer and use it over and over.  The flavor improves each time.  After each use, strain it and remove the fat from the top when it congeals.  Add soy sauce, sherry and chicken broth to maintain the quantity.  Add additional spices after several uses to enhance the quality.  Use the same sauce and technique to prepare beef, pork, lamb or any other meat.  The Chinese call this "red-cooking". Consider a codicil to the will.
