Chicken Salad

Chicken Stock

1 whole chicken

1 head garlic, halved horizontally

1 onion, quartered

1 head celery, core and leafy parts only

2 inches ginger root, chopped

3 star anise

½ bunch cilantro

Salt to taste

1/2 cup mayonnaise

If you have some leftover chicken, use it.  Otherwise, you need to make some Chicken Stock.  Put the chicken in a soup pot and just cover with water.  Add the other Chicken Stock ingredients.  Bring to a boil over high heat for one hour.  Strain through a colander and reserve the stock for something else (a nice by-product of this recipe).  When the chicken cools, use your hands to remove the skin and shred the chicken into small pieces.  Stir in the celery, mayonnaise and Lawry’s.  I like my sandwiches on toasted bread with lettuce, mayonnaise, salt and pepper.

Our comments:  “How do you like your chicken salad?”  This is how we test waiters.  You are at a restaurant and you have some questions about the menu.  You want to ask the waiter for help, but you don’t know if you like the same things.  Hit him with the chicken salad question.  If you don’t like his answer, ignore his advice.  Allyson came up with this and it works.
