Chicken Salad
Chicken Stock
1 whole chicken
1 head garlic, halved horizontally
1 onion, quartered
1 head celery, core and leafy parts only
2 inches ginger root, chopped
3 star anise
½ bunch cilantro
Salt to taste

3 stalks celery, diced
1/2 cup mayonnaise

If you have some leftover chicken, use it. Otherwise, you need to make some Chicken Stock. Put the chicken in a soup pot and just cover with water. Add the other Chicken Stock ingredients. Bring to a boil over high heat for one hour. Strain through a colander and reserve the stock for something else (a nice by-product of this recipe). When the chicken cools, use your hands to remove the skin and shred the chicken into small pieces. Stir in the celery, mayonnaise and Lawry’s. I like my sandwiches on toasted bread with lettuce, mayonnaise, salt and pepper.
