Chinese Tacos

Peanut oil

1 1/2 lb. ground chicken

3 green onions, chopped

1/2 lb. shitake mushrooms, chopped

1/4 cup oyster sauce

3 water chestnuts, chopped

1/4 cup pine nuts

Romaine lettuce leaves

Heat the oil in a wok over high heat.  Add the chicken and green onions and stir-fry until the chicken is almost cooked (about 2 minutes).  Add the mushrooms and oyster sauce and stir fry until the mushrooms are almost cooked (about 2 minutes).  Add the water chestnuts and pine nuts and stir-fry for another minute.  Serve on Romaine lettuce leaves and eat with your hands just like you would with a taco.

 

Our comments:  Hong and Jim Bass throw some excellent dinner parties.  Hong serves course after course almost as fast as Jim serves up controversial topics.  We had already worn out politics and religion when Jim offered up his support for a 20-year wedding contract with a series of 5-year options to extend.  Hmmmmm.  I used to think Jim might make it in politics, now I’m not so sure.  He pretty well alienated the female vote.  Anyway, Hong served this as the melee intensified.  The food was more memorable than the conversation.

You can substitute Chinese BBQ duck for the chicken it that sounds good.
