Chocolate Souffle

Chocolate Soufflé

2 tsp. butter

1/2 cup sugar, in all

8 oz. semi-sweet chocolate, chopped fine

4 large egg whites

3 large egg yolks

1/4 cup Grand Marnier

Powdered sugar

whipped cream

Grand Marnier Sauce

1/4 cup heavy cream

1 1/2 tsp. Grand Marnier

3/4 tsp. sugar

3/4 oz. semi-sweet chocolate, chopped fine

Preheat oven to 400 degrees.  Prepare 4 individual ramekins by greasing each with 1/2 tsp. butter and then sprinkling about 1 tsp. sugar inside.  Shake to coat the bottom and sides with sugar.  Melt the chocolate in a double boiler and pour into a large bowl.  Combine the egg whites with 1/4 cup sugar in another bowl and beat until stiff and glossy.  Whisk the egg yolks into the chocolate one at a time.  Add the Grand Marnier and whisk in the remaining 2 Tbsp sugar.  Fold in the egg whites and whisk until thoroughly blended.  Pour the chocolate mixture into the prepared ramekins and bake until they are puffed and somewhat firm (about 20 to 25 minutes).  While the soufflés are baking, get ready to prepare the Grand Marnier Sauce.  About 5 minutes before the soufflés come out of the oven, heat the cream in a small skillet over high heat.  Add the Grand Marnier and sugar.  Start whisking in the chocolate and bring to a boil, whisking constantly.  Remove from the heat.  Finally, dust the top of each with powdered sugar, break a hole in the top and spoon in the sauce and crown with a mound of whipped cream.
