Chopped Sirloin with Parsley Vermouth

Meat Patties

1.5 lb. ground sirloin

2 tsp. Dijon mustard

1 tsp. salt

1/2 tsp. pepper

5 tsp. Cognac

1 Tbsp. chives

Vermouth Sauté

2 Tbsp. butter

2 Tbsp. olive oil

1 cup chopped parsley

1/3 cup sweet vermouth

Combine all the meat patty ingredients in a large bowl and mix with your hands until thoroughly blended.  Form three 1/2 pound patties.  Grill over charcoal (if you like a “flat” patty, then dent the top of each patty with the bottom of a bottle before putting them on the grill).  Just before the meat comes off the grill, heat the butter and oil in a skillet over medium heat until it is hot.  Add the parsley and sauté a few seconds until wilted.  Add the vermouth and stir for 30 seconds.  Pour the Parsley Sauté over the sirloin patties and serve immediately.

 

Our comments:  I grew up eating this.  It is a great way to turn a meat patty into something special.
