Fried Okra
1 lb. okra, cut into 1/2 inch slices
1 cup flour
1 Tbsp. "Creole Seasoning"
1 egg
3 Tbsp. water
salt to taste
Peanut oil
Pour the vegetable oil into a large skillet and start heating the oil to 375 degrees. Combine the flour and "Creole Seasoning" in a large plastic bag like a trash can liner. In a large bowl, beat the egg with the water. Add the okra to the bowl and toss to coat the onions with the egg mixture. Remove the okra to the plastic bag and toss to coat with the flour mixture. Use a thermometer to get the oil to the right temperature. Fry the okra until golden. Remove to paper towels and sprinkle with salt.
Our comments: We love fried okra. We had to have the perfect recipe. We did a lot of experimenting in 2000. This is good, but maybe not the best we ever put in our mouth. It is, however, the best we have prepared so far, and good enough to stop experimenting. Sometimes I steam the okra slices for 5 minutes and skip the egg wash.
