German Pancakes
1/4 cup butter
3 eggs
3/4 cup milk
3/4 cup flour
2 Tbsp. powdered sugar
1/2 tsp. cinnamon
Matterhorn
Put the butter in a large skillet that can go into the oven. Put the skillet in the oven and as you begin to heat the oven to 425 degrees. As the oven heats, combine the remaining ingredients in a large bowl and mix well. Pour the mixture into the skillet and return the skillet to the oven until golden brown and puffed (about 25 minutes). Serve with sugar and cinnamon or syrup.
Our comments: Known fondly by the children as "Butter Pie" (guess who taught them that). Allyson turns queasy when she hears it. Thus, we only serve this when Mama is left out of the decision. Don't misunderstand, Allyson likes this recipe. She just has trouble when it is requested by the children ("Butter Pie"), and it is never requested by anyone but the children.
