Grilled Black Cod
1 side of Black Cod
2 Tbsp. vegetable oil
3 Tbsp. sesame seeds, toasted
2 green onions, sliced thin
Oriental Marinade
½ cup Mirin
¾ cup soy sauce
¾ cup sugar
2 cloves garlic
1 tsp. ginger
Oriental Marinade. Combine all the marinade ingredients in a food processor and puree. Pour the puree into a saucepan and cook over medium heat for 10 minutes, stirring often. Cool and refrigerate.
The Fish. Combine the fish and the marinade in a zip-lock bag and marinate for at least 6 hours. Light the grill. Remove the fillets from the marinade and coat each with a little oil. Grill over a hot fire, skin side down (this fish uses a very short grilling time as it is almost cooked in the marinade). Garnish each fillet with sesame seeds and green onion slivers and serve.
Our Comments. This is as close as I can get to the black cod at Nobu.
