Grilled Shrimp

1 lb. shrimp, peeled

The Marinade

2/3 cup pickled jalapeno slices

1/4 cup liquid from the jalapeno jar

5 little limes, juice only

4 Tbsp. corn oil

1 bunch cilantro

1 bunch green onion

6 cloves garlic

Combine all of the marinade ingredients except the oil in a food processor and puree.  While the processor is running, slowly pour in the oil.  Combine the shrimp and the marinade in a plastic bag and let the shrimp marinate at room temperature for 45 minutes (and no longer).  Light the charcoal in your grill (a Weber, of course).   Arrange the shrimp in one of those baskets they make for grilling fish that will clamp shut and will allow you to flip the shrimp by simply flipping the basket.  When the fire is hot, grill the shrimp until done (less than 5 minutes per side).

Our comments:  This is one of the best ways we know to prepare shrimp.  You really can't screw it up ... unless you marinade it too long.  We grill the shrimp until they are a little charred and we do not baste.  Perhaps you will find a use for all that leftover marinade.
