Lapa Rios Salad

Salad

1 head heart of romaine. sliced ½” thick

½ cup red cabbage, diced

½ cup cucumber, diced

1/3 cup green onion, chopped

½ cup toasted almond slices

¼ cup cilantro, chopped

Dressing

1/3 cup soy sauce

3 Tbsp. ginger, minced

2 Tbsp. garlic, minced

1/3 cup white sugar

1/3 cup rice vinegar

1 tsp. pepper

1 cup corn oil

1/3 cup sesame oil

Combine all the dressing ingredients except the corn and sesame oil in a food processor and puree.  While the processor is running, slowly stream both oils through the feed tub until the oil is incorporated.  Combine the salad ingredients in a salad bowl.  Add dressing to taste and toss until coated.
