Macadamia Pesto

¼ cup olive oil

6 Tbsp Parmesan, grated

2 Tbsp garlic, chopped

¼ cup lemon juice

6 cups basil leaves

¼ cup macadamia nuts, crushed

½ tsp. salt

Combine the olive oil, cheese, garlic and lemon juice in a food processor and process to a paste.  Add basil leaves 2 cups at a time, processing to a paste after each addition, until the basil is gone.  Remove the ingredients to a bowl and stir in the pre-crushed nuts.

Our comments: Great on pasta with boiled shrimp.
