Machado Con Huevos

3 Tbsp. vegetable oil

1 1/2 cups leftover brisket, chopped

1/2 cup onion, chopped

1 cup tomatoes, chopped

2 jalapeno peppers, seeded and minced

8 eggs, whisked

1 tsp. kosher salt

1/2 tsp. black pepper

Heat the oil in a skillet over low heat.  Add the beef and onion and sauté for 2 minutes.  Add the tomatoes and jalapenos and sauté another 3 minutes.  Add the eggs, salt and pepper and stir continuously until eggs reach desired doneness.

Our comments:  This is all about the meat.  Remember that brisket you spent all day smoking that was so disappointing you wanted to throw all 10 pounds in the trash?  Well, now you only have to throw away 9 1/2 pounds.  That smoky flavor turns this egg dish into something special; the tougher the better.  Any leftover meat that was cooked outside works great.
