Mumsie's Scalloped Oysters
1 qt. oysters
24 saltine crackers
8 Tbsp (1 stick) butter
1 cup heavy cream
salt & pepper
Paprika
Tobasco
`Worcestershire sauce
Preheat the oven to 400 degrees. Drain the oysters in a colander. Place half of the oysters in a greased casserole dish and sprinkle with salt, pepper, a dash of tobasco and a little Worcestershire sauce. Crush the crackers into fine crumbs by putting them into a plastic trash bag and mashing them. Pour half of the cracker crumbs over the oysters. Dot with half of the butter and put in half of the cream. Prepare a second layer just like the first. Sprinkle paprika over the top. Bake until brown (about 45 minutes).
Our comments: This was Hays' grandmother's (Mumsie) dish. She never celebrated Thanksgiving without it. We can't fix it without thinking of her and wouldn't celebrate any Thanksgiving without it. She died on Thanksgiving Day, 1982. This recipe has never let me down (neither did she). Very good and very rich!
