Okra Gumbo

1 lb. okra, sliced

1 onion, chopped

2 cloves garlic, chopped

1 bell pepper, chopped

1 lb. tomatoes, ch0pped

3 Tbsp. olive oil

1 tsp. salt

1/4 tsp. pepper

2 Tbsp. sugar

Sauté the okra in olive oil over high heat until the okra is tender.  Add everything except the tomatoes and cook until the onions are tender, stirring occasionally.  Add the tomatoes and cook until the tomatoes lose their shape.  Turn the heat down and simmer until the sauce thickens slightly (about 5 minutes).
