Pub Cheese
3 cups cheddar cheese, grated
1/4 cup beer
3 Tbsp. lemon juice
2 Tbsp. ketchup
2 Tbsp. Worcestershire sauce
1 Tbsp. horseradish
2 tsp. Tabasco
1 1/2 tsp. dry mustard
1 clove garlic
2 Tbsp. red wine (or port)
Combine all ingredients in a food processor and pulse until smooth. Transfer to a bowl and serve.
