Pesto

1/2 cup pine nuts

4 cloves garlic

1 tsp. salt

1/2 tsp. pepper

3 cups fresh basil

1/4 lb. parmesan cheese, grated fresh

1/4  lb. romano cheese, grated fresh

1 1/2 cups olive oil

Combine all the ingredients except the oil in a food processor.  As you are running the food processor, gradually pour in the oil.  Continue adding oil until the mixture is soft but not runny.

Our comments:  Awesome! This is nice to have in the refrigerator all the time.  For a great meal, just boil pasta and add some of this pesto.  Throw in some boiled shrimp for a real feast.  Allyson keeps sack of frozen shrimp from Sam's in the freezer for just this purpose.  While one might argue that these shrimp are a bit rubbery, they seem to find forgiveness with the pesto.
