Red Roast Chicken

1 chicken

2 tsp. kosher salt

1 onion, quartered

 

Seasonings Bowl

¼ cup honey

¼ cup soy sauce

Stir together the Seasonings Bowl ingredients.  Put the chicken in a zip-lock bag, pour in the Seasonings Bowl and marinate overnight.  Remove the chicken from the zip-lock. Sprinkle with salt and put into a clay pot for baking.  Bake the chicken and onion in a clay pot at 400 degrees for 90 minutes.

Our comments:  Might be the easiest/best chicken ever!  Get the Lucky Peach cookbook for the best Asian recipes!   Alternatively, truss the chicken and roast at 400 degrees for 50 minutes (or until the thigh joint measures 150 degrees).  If the skin begins to darken too much, cover with a foil tent and keep cooking.
