Roasted Potatoes

1/2 cup olive oil

1 tsp. salt

1/2 tsp. pepper

10 new potatoes, cut in half

Preheat the oven to 400 degrees.  Pour the olive oil into a glass baking dish.  Add the salt and pepper and stir to combine.  Arrange the potato halves cut side down in the baking dish.  Bake until the potatoes are nicely browned on the bottom (about 40 minutes).  You can check for doneness by either lifting a potato with a spatula or by holding the glass dish overhead and looking through the glass.

Our comments:  This recipe falls into the "quick, easy and good" category.  The potatoes are crispy on the bottom and somewhat saturated with olive oil.  Only the hardest-core bubbas will add butter to these potatoes.
