Sesame Roquefort Dressing

3/4 cup olive oil

3 Tbsp. red wine vinegar

1 tsp. salt

1/2 tsp. pepper

2 Tbsp. heavy cream

1/3 cup crumbled Roquefort cheese

2 Tbsp. toasted sesame seeds

Start by toasting the sesame seeds.  Place the seeds in a dry skillet over medium heat.  Shake the pan continuously until the seeds are golden (about 1 minute).  Combine the cheese and cream in a mixing bowl and mix well.  Then combine all of the ingredients in a plastic storage container (with a tight top) and shake until thoroughly blended.

 

Our comments:  This is Hays' favorite Roquefort dressing.
