Squash Casserole

2 Tbsp butter

1 sweet onion, chopped

2 lb. yellow squash, sliced (about 4 squash)

Seasonings Bowl

¼ cup parmesan, grated

¾ cup manchego, grated

½ cup bread crumbs

2 large eggs, beaten

1 tsp salt

½ tsp black pepper

Preheat the oven to 375 degrees.  Set up the Seasonings Bowl.  Butter a baking dish.  Melt the butter in a large skillet over medium-high heat.  Add the onion and stir-fry until it is cooked (about 5 minutes). Stir in the squash, cover and cook until the squash is tender, stirring occasionally (about 7 minutes).  Transfer the onion and squash to large bowl and allow to cool.  Stir in the contents of the Seasonings Bowl.  Transfer the squash mixture to the buttered baking dish.  Bake until the top is crisp and golden brown and a knife inserted in the center comes out clean (about 30 minutes).
