Squash & Corn

¼ cup vegetable oil

1 cup chicken stock

Salt to taste

Vegetable Bowl

5 cloves garlic, chopped

1 onion, chopped

1 bell pepper, chopped

2 zucchinis, chopped

2 chayote squash, chopped

6 ears corn, kernels half-cut and ears scraped

Seasoning Mix

1 tsp cornstarch

2 tsp cumin

2 tsp black pepper

7 tsp bread crumbs

Make the Seasoning Mix.  Set up the Vegetables Bowl.  Heat oilin a large skillet over high heat until smoking hot.  Empty the Vegetables Bowl into the skillet.  Add the  Seasoning Mix and toss for about 1 minute.  Add the chicken stock and toss for another minute.  Salt to taste.

Our comments: We used to go dove hunting near San Fernando, Mexico at a place called Campo la Cruz.  They served the tastiest squash and corn mixture.  It was 10 times better than this recipe, but this still works.
